Instructions
Preheat the oven to 300°F and line a baking sheet with parchment paper.
In a bowl, add the almond meal, coconut sugar, and matcha powder. Whisk to combine
Add the chocolate chips and stir to combine and coat the chips with flour.
In a mixing bowl, whisk the egg whites with the vanilla extract and a pinch of salt until stiff peaks form.
Fold in the egg whites to the matcha mixture with a wooden spoon.
Chill dough in the freezer for 10 minutes until it thickens and can be easily scooped.
Scoop the dough into 14 small balls and flatten them with your hands before placing on a lined baking sheet.
Bake in the preheated oven for 15 minutes.
Remove from the oven and let cool before serving.
Notes
Either almond flour or coarse almond meal can be used as the base of this cookie dough.
Any flavor of chocolate chips would be delicious in these.
