white sugar

light brown sugar

almond flour

coconut flour

mini chocolate chips
Instructions
Beat the butter and sugars in a mixing bowl until smooth and fluffy.
Add the almond flour, coconut flour, salt, milk and vanilla extract. Mix until you have a thick dough.
Add the chocolate chips and mix to distribute them through the cookie dough.
Take small chunks of the dough (about 1 tbsp each) and roll into balls with your hands.
Push a few extra chocolate chips onto the outside of the balls if desired.

While you can make this recipe with a mixer, it's easy to mix by hand as well. I used a sturdy wooden spoon!
Since we aren't baking this cookie dough, the recipe is very forgiving and easy to make substitutes with!
Switch the sugars for alternative granulated sweeteners of your choice.
Switch the butter, milk and chocolate chips for vegan alternatives if desired.
Store the cookie dough bites at room temperature for up to 3 days or in the fridge for up to 7 days.
