Ingredients

Instructions

  • Preheat the oven to 300°F and line a baking sheet with parchment paper.
  • In a bowl, add the almond meal, coconut sugar, and matcha powder. Whisk to combine
  • Add the chocolate chips and stir to combine and coat the chips with flour.
  • In a mixing bowl, whisk the egg whites with the vanilla extract and a pinch of salt until stiff peaks form.
  • Fold in the egg whites to the matcha mixture with a wooden spoon.
  • Chill dough in the freezer for 10 minutes until it thickens and can be easily scooped.
  • Scoop the dough into 14 small balls and flatten them with your hands before placing on a lined baking sheet.
  • Bake in the preheated oven for 15 minutes.
  • Remove from the oven and let cool before serving.

Notes

  • Either almond flour or coarse almond meal can be used as the base of this cookie dough. 
  • Any flavor of chocolate chips would be delicious in these.
