Slowly and gradually add the hot water to the matcha powder, whisking as you go. Continue to whisk until frothy.
Add the honey and 1 cup milk and stir until combined. Set aside.
Add the strawberries, heavy cream, ½ cup milk and sugar to a blender and blitz until smooth.
Divide the ice between two glasses. Pour in the matcha mixture to fill each halfway.
Slowly pour the strawberry mixture on top. Stir gently.
Notes
An electric mini whisk or frother can make the job of frothing the matcha easier and quicker. Otherwise, a matcha whisk works just fine!
Garnish the glasses with fresh strawberries, and don't forget the straws!
Pour the strawberry mixture over the matcha mixture slowly so that you create a beautiful layered effect. If you pour too fast, the colors will mix.
To make this recipe vegan, replace the milk and cream with coconut milk, oat milk, or almond milk.
