Slice the green tomatoes into ¼-inch rounds and place them on a plate.
Place the beaten eggs in a shallow bowl.
Combine the gluten-free panko breadcrumbs and cornmeal in a second shallow bowl.
Dip each tomato slice into the beaten egg, allowing the excess to drip back into the bowl.
Gently press the panko-and-cornmeal mixture onto the top, bottom, and sides of each tomato slice.
Lightly spray the air fryer basket with spray oil. Arrange up to four tomato slices in a single layer without overlapping them, then lightly spray the tops with oil.
