VEGAN CHOCOLATE CHIP PUMPKIN MUFFINS RECIPE
These vegan and gluten free muffins are so tender and moist. They are packed with pumpkin flavor and warm spices, with the added bonus of sweet chocolate chips. I think these are a perfect fall breakfast or treat! I am also a big fan of this recipe for Vegan Pumpkin Chocolate Chip Cookies.

Vegan Pumpkin Chocolate Chip Muffins are Easy to Make! To make this recipe you'll need a few standard gluten free baking pantry ingredients, Some vegan chocolate chips, and just about a half hour in the kitchen.
INGREDIENTS IN VEGAN CHOCOLATE CHIP PUMPKIN MUFFINS
All Purpose Gluten Free Flour - I prefer using Bob's Red Mill 1-to-1 Baking Flour Blend. If you have a tried and true GF flour blend that you love, use that one! Note that the BRM baking blend has xanthan gum already in it, so you won't need to add any extra.
Baking Soda and Baking Powder - Muffins are basically small quick breads. These two help the bread to rise and get a fluffy texture.
Xanthan Gum - Only add this if your GF flour blend doesn't already include it. Xanthan gum allows gluten free flours to act more like gluten flours.
Salt - Just a bit enhances the other flavors in these muffins.
Cinnamon - This warm spice is perfect for fall and pairs wonderfully with pumpkin.
Nutmeg - Cinnamon's most common partner, this is another warm spice that is wonderful in sweet recipes.
Ground Ginger - Ginger gives a bit of a bite.
Oil - Canola or Vegetable oil is what I recommend. You can use any flavorless oil for this recipe.
Sugar - Granulated sugar is our sweetener, and it's just enough to give the perfect flavor.
Flax Egg - You'll need 1 ½ batches of Flax Egg. Click through to see how I make it, it's perfect for vegan baking recipes like this one.
Pumpkin Puree - Canned or fresh pumpkin puree will work in this recipe.
Almond Milk - Any non-dairy milk will do the job.
Vanilla Extract - A good quality, pure vanilla extract gives tons of flavor to our muffins.
Vegan Chocolate Chips - Use your favorite brand!

HOW TO MAKE VEGAN PUMPKIN CHOCOLATE CHIP MUFFINS
- Assemble your ingredients, preheat your oven, and line a muffin pan with cupcake liners.
- In a large mixing bowl, whisk together the gluten free flour, baking soda, baking powder, xanthan gum, salt, and spices until well combined.
- In another large bowl, whisk the sugar and oil into a thick paste.
- Add the flax egg, pumpkin puree, almond milk and vanilla extract. Whisk to combine.
- Sieve or sift the flour mixture into the bowl with the wet ingredients and gently fold everything together. It's ok if there are a few small lumps in the batter.
- Add the chocolate chips and fold them through.
- Evenly distribute the batter into your lined muffin pan. Each space should be ¾ of the way full.
- Bake as directed in the recipe card below. You'll know they are done when a skewer or toothpick inserted into the center of the muffin comes out clean.

WHAT ELSE CAN I ADD TO PUMPKIN CHOCOLATE CHIP MUFFINS?
I love that muffin recipes are pretty forgiving, and can handle some extras whenever I feel like adding some.
I think that some nuts would give a really nice crunch! Try chopped walnuts or pecans. Toast them first for extra flavor.
Any variety of dairy free chips could be used instead of chocolate chips. You could even leave the chocolate out all together and instead add some dried fruit!
DO I NEED PUMPKIN SPICE TO MAKE PUMPKIN MUFFINS?
For this recipe we're adding cinnamon, nutmeg and ginger separately, so if you don't have pumpkin spice on hand you can use the individual spices. If you have pumpkin spice, just use that in place of the three spices. It is already a blend of all of them.
HOW MUCH PUMPKIN PUREE IS IN A 15 oz. CAN?
There is just less than two cups of pumpkin in a 15 oz. can. For this recipe, use a measuring cup to measure out 1 ½ cups. You'll have a little bit leftover. Add it to a smoothie or to your morning oatmeal for a special treat.
WHAT CAN I SUBSTITUTE FOR PUMPKIN PUREE?
Want to know a secret? You can use other squash to make pumpkin baked goods, and they taste just as good! Often, the canned pumpkin you buy in the store is actually a mixture of other types of winter squashes. This tip is helpful for people who grow a lot of butternut squash or maybe you just can't find canned pumpkin at a store near you. Try canned or cooked and pureed butternut squash or sweet potatoes with this recipe.
HOW TO STORE VEGAN PUMPKIN CHOCOLATE CHIP MUFFINS
Keep your muffins in an airtight container at room temperature until ready to eat. They should stay fresh for at least 3 days. For longer storage, wrap the muffins well and freeze for up to 3 months.

- Add the flax egg, pumpkin puree, almond milk and vanilla extract. Whisk to combine.

Notes
- I prefer using Bob's Red Mill 1-to-1 Baking Flour for this recipe. If you use that, you don't need to add xanthan gum since it's already included in the mix.
- Add in chopped nuts if desired.
