I am always looking to see what I can throw together for a week’s worth of lunches or dinners. You see, with my busy family schedule we don’t always get a meal at home together.

We actually spend much of the week at the soccer fields. Yep, I am a soccer mom! So if I can prep some food and then throw the containers to take to the fields, that makes feeding my family a lot easier!

These are the simple and whole-food ingredients in this filling salad. 

  • chickpeas
  • red onion
  • olives
  • feta cheese
  • tomatoes
  • cucumber
  • parsley

If you are a lover of capers, you can add those in too! They are a perfect addition to this Mediterranean Chickpea Salad. Try it, you won’t be disappointed! I promise!

What are capers? 

Capers are immature flower buds. They are usually pickled in vinegar and salt. They are usually used in savory dishes. So in my salad, they add a fresh burst of salty flavor.

What Makes a Salad Mediterranean? 

My salad has all the flavors and textures that you associate with Mediterranean dishes. Mediterranean countries all border the Mediterranean Sea. These are the foods and where they typically come from. 

  • Olives – Olives are grown all over the world, including Greece and Italy.
  • Chickpeas – India is the largest producer in the world.
  • Capers – These are grown in dry, stony areas of the Mediterranean such as Italy, Spain, and Morroco. 
  • Feta Cheese – This cheese originated in Greece. 
  • Balsamic Vinegar – This is a product of Italy

Ingredients

  • 2 c chickpeas cooked
  • 1 1/2 c quartered cherry tomatoes
  • 1/2 c red onion diced
  • 1 c kalamata olives halved
  • 1 c diced cucumber
  • 1/2 c feta cheese
  • 1/2 c parsley
  • capers optional
  • 1 T balsamic vinegar
  • 1/3 c olive oil

Instructions

  • Mix all ingredients together.
  • Season with salt and pepper.
  • ENJOY!
