NO BAKE CORNFLAKE COOKIES RECIPE
You are probably thinking, do we really need to think about Christmas Cookies right now? I say, it is never too early to start. To be honest, you can enjoy these no bake cornflake cookies any time of the year. To make them festive for the current time of the year, just adjust the color of sprinkles you add to this cornflake cookie recipe! So easy!

I became a huge fan of no bake cookies, when I had kids. Whether it was the thought of dirtying so many dishes then heating up the oven that steered me away from other cookies. With no bake cornflake cookies, the instructions are simple and it is so kid friendly. I guess we can said that these cornflake cookies can be kid made and kid approved! I’d say that is a win!
Traditionally, you see cornflake cookie recipes that include peanut butter. That is not the case today for our no bake cookies! We are actually using SunButter.
WHAT IS SUNBUTTER?
Sunbutter is a brand of sunflower seed butter. It is a direct 1-1 swap for peanut butter. I discovered this brand when my youngest son started to display food allergies, way back around 2012. It was a life-saver for us. SunButter is actually free from the Top 8+ allergens and quite frankly it tastes amazing. SunButter is not only loved by the food allergy community, those without food restrictions have fallen in love with this nut-butter alternative.
INGREDIENTS IN NO BAKE CORNFLAKE COOKIES
Cornflakes - Use whatever brand you'd normally eat for breakfast. There are a number of good gluten free options.
SunButter - We love this nut-free alternative to peanut butter.
White Chocolate - This adds sweetness and helps the SunButter to set up and hold everything together.
Sprinkles - If you want to add some flair, add some sprinkles to decorate.

HOW TO MAKE CORNFLAKE COOKIES
- In a skillet over low heat, add the SunButter.
- Combine the SunButter and the white chocolate.
- Stir continuously until the mixture is combined and blended well.
- Stir in the cereal to the mixture. Gently, stir so that all cereal pieces are coated with the mixture.
- Drop spoonfuls of the cornflake cookie mixture onto a baking sheet lined with parchment paper. Top with sprinkles at this time if you are using any.
- Chill the cornflake cookies for 20 minutes. ENJOY!

- You can freeze these cornflake cookies. This may be helpful around the holidays when you are batching a larger quantity of no bake cornflake cookies.
- If you want to transport these no bake cornflake cookies, you can carry them in muffin containers. That makes transport easy as the cornflake cookies do not bang together in transit.
- You can also sub out the cereal to one that fits your needs or tastes for this cornflake cookie recipe.
- Don’t worry if your cornflakes (or other cereal) break during the stirring.
- You can sub in dairy-free white chocolate or dark chocolate if you wish.
- If you are not nut-allergic, you can add in nuts to the mixture. You can also add in sunflower seeds for more texture and taste.
- You can also press these into an oiled 8x8 pan, let it set in the fridge and cut into squares. I, however, prefer the drop cookie method.
- Chilling your cookies in the fridge or freezer, allows them to “set” quicker.
- Store in air tight container.
