BALSAMIC TOFU AND MUSHROOMS RECIPE
We are huge fans of tofu at our house. We love to play around and see the fun and simple creations that we can make with tofu.
This balsamic tofu and mushrooms dish was super easy to make and very tasty! The mushrooms add an earthy taste to the dish and the balsamic adds some delicious flavor!
Don’t be afraid of making roasted tofu! It’s actually a very forgiving gluten-free food item to work with. Plus, it takes on flavors of sauces and other foods really, really easily. Soy sauce and balsamic vinegar are just two of the sauces that tofu takes to really, really well.
And if you like to cook with oils, sesame oil and olive oil work well with tofu, too!

To make this dish we first pressed our tofu. Pressing your tofu is important, did you know that? I didn't at first, but throughout the years I've come to realize the need for pressing your tofu!
HOW TO PRESS TOFU
There are two ways to press tofu. You can use a Tofu Press or you can press your tofu by balancing heavy objects on top of it.
I prefer the tofu press method. It has been almost a decade that I have been using the EZ Tofu Press. I use it weekly and it continues to do an amazing job!
The EZ Tofu Press takes the liquid out of your firm or extra firm tofu easily, quickly, and with less mess than using plates and cans. This press utilizes simple mechanics and quality materials to ensure that it’s long-lasting and easy to use.
HOW LONG TO PRESS TOFU
I press my tofu (using the EZ Tofu Press) for 10-12 minutes. I turn the knobs tighter on the press every 3-4 minutes.
INGREDIENTS IN BALSAMIC TOFU AND MUSHROOMS
Extra Firm Block Tofu - Prepare the tofu by pressing as instructed above.
Balsamic Vinegar - adds depth of flavor and a savory tang.
Garlic Salt - One of my favorite seasonings to cook with, garlic salt is great on almost anything.
Italian Seasoning - All of your favorite herbs, in one convenient blend.
Onion Powder - Using onion powder in this recipe makes it taste like we slow cooked it all day.
Sliced mushrooms - White mushrooms or baby bella/criminis are perfect.
Parsley - Makes a beautiful garnish.

HOW TO MAKE BALSAMIC TOFU AND MUSHROOMS
- Clean and slice the mushrooms.
- Press the tofu to remove any extra moisture.
- Slice tofu into planks and marinate in a mixture of balsamic, italian seasoning, garlic salt, and onion powder.
- Place marinated tofu plants on a lightly oiled, lipped baking sheet.
- Top with mushrooms.
- Broil as directed in the recipe below.

Mushrooms are fungi! So they are in a space all their own, set apart from plants and animals. The body of a mushroom stores nutrients. Mushrooms are nutritious.
They are a good source of B vitamins. It is said that they rank the highest among vegetables when it comes to protein.
CAN TOFU BE USED IN A NUMBER OF DIFFERENT RECIPES WITH EASE?
Yes, prepared tofu is so simple to use. As I stated earlier, pressing the tofu is one of the most important parts to do! After that, cooking with tofu is a total breeze!!
DOES IT TAKE A LONG TIME TO COOK TOFU?
Not at all. If you have 30 minutes, you’re good to go! You can cook it in a large skillet over medium heat or consider putting on a baking sheet and popping it in the oven.

CAN YOU USE DIFFERENT MUSHROOMS IN BALSAMIC TOFU?
Of course! You can use any type of mushrooms that you would like! I bet portobello mushrooms would be really, really good! (If you make it with a different mushroom make certain to come back and tell me how it is!)

Balsamic Tofu and Mushrooms
Ingredients
- 1 block of extra firm tofu
- 1 cup balsamic vinegar
- 1 T Italian Seasoning
- 1 t Garlic Salt
- 1 t Onion Granules
- 8 oz of sliced mushrooms
- Parsley for garnish
Instructions
- Using your tofu press, press the tofu then slice into planks.
- Whisk together balsamic, italian seasoning, garlic salt and onion granules.
- Marinate tofu planks in balsamic marinade for 30 minutes to 1 hour.
- Place planks on a lightly oiled lipped pan. Top with mushrooms. Place under broiler. Each broiler will vary, my tofu was cooked with 5 minutes on each side.
- Plate your tofu and mushrooms, garnish with parsley if desired.
- ENJOY!

Luckily I'm going to the Japanese market this weekend - I think I gave my last box to my youngest daughter so I'll have to buy a couple. If you follow the directions on the package, it calls for some ground beef, browned and drained, but you can leave that out or use a vegan substitute for that if you want. I look forward to seeing what recipes you share using tofu. I could really use this press. I did make one thing that had Japanese eggplant and baby bok choy plus tofu. It was amazing. I'll check the supply of what I need for that this weekend, too.
