These zucchini pizzas can also be made with summer squash. You can easily customize your little garden pizzas with the ingredients you want.
We have made these pizzas with dairy cheese and non-dairy cheese. It works great either way!
With two growing boys in my house, there always seems to be somebody hungry. (including me!) I am always looking for inventive ways for my family to snack.
Zucchini is a favorite in our house and so is pizza. So why not combine the two? This recipe is simple…zucchini, sauce, cheese and olives! Easy!
So start with with zucchini and/or some summer squash of various sizes. Slice the squashes into wheels.
Next, you are going to top with your favorite pizza sauce! You can also use pureed tomatoes, if you don’t have a sauce available!
Time for toppings!
Then top with your favorite ingredients. I love black olives so I added those to my zucchini pizzas!
You can also add bell peppers, mushrooms and more!
Next up is the cheese! You can use your favorite cheese to TOP your zucchini pizzas! Yum, I am getting hungry!
Throw the pan under the broiler until your cheese melts and then you are ready to eat!

Let’s get to this recipe!
- 1-2 large zucchini
- pizza sauce or marinara sauce
- mozz cheese
- black olives
Slice zucchinis into circles.
Spread sauce on zucchini,
Top with cheese and olives.
Broil until cheese is golden.
