MATCHA CHOCOLATE CHIP COOKIE RECIPE
I have been loving matcha lately! I like it in drinks, I like it in breakfast smoothie bowls, and now I like it in cookies too. These matcha chocolate chip cookies are packed with the bright, earthy flavor of matcha plus the sweetness of coconut sugar and chocolate chips.
If you're not already a huge matcha fan like me, you should know that matcha is a powdered form of green tea. Generally very high quality tea leaves are used to make matcha, which is why the entire leaf is used in matcha tea rather than just steeping them. The flavor of matcha is very unique. It's bright yet earthy, and sweet yet slightly bitter.

Today we're baking with matcha instead of making drinks out of it. You are going to love the flavor of these cookies, and they're pretty easy to make. Let's do it!
INGREDIENTS IN MATCHA CHOCOLATE CHIP COOKIES
Almond Meal - The coarse texture of almond meal or finely ground almonds is really nice in these cookies. If you need to, you can use almond flour instead.
Coconut Sugar - Coconut sugar is unrefined and has a low glycemic index, which makes it a healthy sweetener option.
Cornstarch - The addition of cornstarch to cookie recipes helps to make them wonderfully chewy.
Matcha Powder - a culinary grade matcha powder is perfect for this recipe. You don't necessarily need to spend the money on the higher quality, "ceremonial" style when you're baking with matcha.
Egg Whites - We will be whipping these up to add air and leavening to the cookie dough.
Salt - Just a pinch will enhance the flavors.
Vanilla Extract - I don't think I've ever met a cookie that didn't benefit from some good quality vanilla.
Chocolate Chips - Semisweet or milk chocolate chips go really well with the matcha flavor.

WHAT TO SERVE WITH MATCHA CHOCOLATE CHIP COOKIES
Matcha has a pretty strong flavor, and so matcha treats are generally best eaten on their own. I like to pair one of these cookies with a cold glass of almond milk or a warm Oat Milk Latte.
CAN I USE DIFFERENT ADD-INS FOR THESE COOKIES?
Absolutely! Whatever you like in cookies would be great with these. Walnuts or pistachios would be delicious, as would dried fruit or white chocolate chips.
ARE MATCHA COOKIES HEALTHY?
These cookies can be considered healthier than some other cookies. Making cookies from scratch automatically makes them healthier than store-bought cookies, since there are no preservatives or chemicals in these. We choose healthy alternatives to make these cookies nutritious as well.
HOW CAN I MAKE MY COOKIES PERFECTLY ROUND?
I like the rustic shape of these hand formed cookies, but to get a smoother edge, use a large round cookie cutter to shape them after they're baked and still warm. You don't need to cut the cookies out, just swirl them around inside the cutter until the edges are smooth.
