Air Fryer Cauliflower Tacos
Tacos are such a popular type of food! Nearly everybody likes some type of taco! For us, we love vegetarian taco recipes! We are always working to create veggie taco recipes that are perfect for Meatless Mondays and Tacos Tuesday!

How to Add Flavor to Veggie Tacos
The trick to vegetarian tacos is amping up the flavor. You can literally go crazy with all the spices combinations you want. In this cauliflower taco recipe, we used chili powder and some ground cumin to flavor up our meatless tacos! We topped them with fresh and delicious mango salsa to take the flavor up yet another notch!
What vegetables work well in meatless tacos?
There are so many vegetables that work well in veggie tacos! Here are a few of my favorites:
- Cauliflower
- Zucchini
- Yellow Squash
- Mushrooms
- Bell Peppers
- Sweet Potatoes
Mango Salsa Directions
This is how I made my mango salsa:
- 1 Large Mango (diced)
- 1/2 red onion (diced)
- 1 red bell pepper diced
- Juice of one lime
Toss all ingredients together and enjoy!
How to make Cauliflower Tacos
These are so simple, all thanks to the air fryer.
- In a bowl, whisk together the eggs and spices.
- In another shallow bowl, put your bread crumbs.
- Dredge one cauliflower floret at a time through the egg mixture and then into the bread crumbs. Once floret is fully covered place into air fryer basket. Be sure to put the vegetables in a single layer and not to over crowd within the basket.
- Give the cauliflower florets a spritz of oil, if you wish. This will help the breading to crisp up. This step is optional. Air fry the cauliflower bites at 350 degrees F for 14 minutes. At the 7 minute mark (half way through the cooking process) remove the air fryer basket and gently shake the veggie pieces.
- When air fryer timer goes off, you can construct your tacos. Equally divide the air fried cauliflower pieces onto the 12 warmed tortillas.
- Make you mango salsa if you wish.
- Top tacos with Mango Salsa.
- ENJOY!
Tips for Air Fryer Tacos
- If you aren’t a cauliflower fan, you can sub in another vegetable like zucchini planks.
- You can make this recipe vegan by subbing OUT the two eggs and replacing then with ¼ cup of maple syrup.
- This recipe does reheat well. Just reheat your cauliflower bites first, then your tortilla.
- If you do not have bread crumbs, you can always smash/crumble some crackers or even a Chex style cereal.
- In this particular recipe, we used Ian’s Gluten Free Italian Bread Crumbs. (affiliate ad link) These particular gluten-free bread crumbs are super allergen friendly. So if you need to avoid things like eggs, milk, peanuts, tree nuts, soy and wheat, you should check them out!

Ingredients
- 2 eggs

- 1 cup panko bread crumbs I used a gluten-free kind
- 1 head cauliflower cut into bite sized florets
- oil spray - as needed
- 12 tortillas I used all corn
- Mango Salsa optional topping
- diced cabbage optional topping
