Cookies are my favorite dessert, but I don't like to wait. Enter Chickpea Cookie Dough! This totally edible raw cookie dough is made with basic vegan ingredients for a sweet treat packed with chocolate and sprinkles.
This gluten-free raw cookie dough is made with coconut flour, coconut sugar, and of course chickpeas! If you love peanut butter cookies, this is the perfect dessert you can make in just minutes. Or maybe a sweet treat of Spumoni to curb that sweet tooth on top of protein cookie dough!

INGREDIENTS IN CHICKPEA COOKIE DOUGH
Chickpeas: The creamy chickpea texture makes this raw cookie dough recipe one of the best!
Peanut butter: Peanut butter cookies are my favorite, so I had to try peanut butter cookie dough. It's the perfect combo of salty and sweet.
Coconut sugar: I make this chickpea cookie dough with coconut sugar instead of regular sugar. You can always swap for brown sugar or your preferred sweetener!
Coconut flour: Keep it gluten free with coconut flour!
Vanilla extract: Even though we are not baking this vegan chickpea cookie dough, you still need that delicious baked good taste. That is all vanilla!
Baking powder: This chickpea cookie dough recipe is meant to be enjoyed raw. However, I add a touch of baking powder so I can bake cookies with any leftovers!
Cinnamon: A pinch of cinnamon adds a burst of flavor to this raw peanut butter cookie dough.
Chocolate chips: You can use any chips you want, from milk chocolate to butterscotch! If you are on a vegan diet, be sure to check your dark chocolate chips package.
Sprinkles: I love the burst of color from a handful of rainbow sprinkles. Option but recommended for optimal fun.
Plant-based milk: Any milk will do! You only need a splash or two if your dough is too crumbly.

HOW TO MAKE CHICKPEA COOKIE DOUGH
- First, drain, rinse, and dry your chickpeas.
- Then, add the chickpeas in the food processor with peanut butter, vanilla extract, coconut sugar, coconut flour, baking powder, and cinnamon.
- Blend the dough until it is smooth and creamy. If the chickpea cookie dough looks crumbly, add a tablespoon of plant-based milk at a time until super smooth.
- Finally, add the cookie dough to a mixing bowl, and gently fold in the sprinkles and chocolate chips.

- 1 can chickpeas
- ⅓ cup peanut butter
- 3 to 4 tablespoons coconut sugar
- 3 tablespoons coconut flour
- 2 teaspoons vanilla extract
- ¼ teaspoon baking powder
- ½ teaspoon cinnamon
- ¼ cup sprinkles
- 1 to 3 tablespoons plant-based milk if needed for texture
Instructions
- Drain and rinse chickpeas.
- Add chickpeas, peanut butter, vanilla extract, coconut sugar, coconut flour, baking powder, and cinnamon to a food processor. Blend until smooth and creamy.
- Add plant-based milk 1 tablespoon at a time if dough is crumbly and dry.
- Add chickpea cookie dough to a mixing bowl and gently fold in sprinkles and chocolate chips. Serve immediately.
