The original TikTok bell pepper sandwich was made with everything bagel seasoning. We did not include that in our recipe, but it is a great addition! This sandwich started in TikTok and migrated over to gain even more popularity on Instagram.

Bell Peppers - The bell peppers will be your replacement for typical bread in the sandwich. You can use any color of bell pepper you wish. Try to pick a medium sized bell pepper, so you can fit all your ingredients. Remember, the larger the bell pepper, the larger the sandwich! Ha! So choose our pepper wisely!
Avocado - Look for an avocado that is still firm but has a little bit of softness. I know that might seem like an impossible task as avocados change to overripe when we aren’t looking! Ha!
Cheese - This is a section that you can improvise with. If you are vegan, use vegan cheese slices. If you are vegetarian, pick your favorite also. We used Mozzarella cheese and Cheddar cheese.
Crunchy Lettuce Leaves - Here is another section you can use your favorite greens in! Love spinach? Use it! Love mustard greens, use them! I used lettuce that I grew in my kitchen with the My Gardyn system!
Cooked Beetroot: If you are eating Keto, you will want to avoid beetroot. It tends to have a higher carb count and is quite starchy. You can purchase cooked beetroot at the store or you can learn how to cook beetroot at home, here.
Cilantro Garlic Sauce : This super easy sauce is a great addition to your pepper sandwich. It does contain dairy but you can make some easy subs to make it vegan if you need to.

How to make a bell pepper sandwich

- Gather your ingredients: Wash vegetables that you will be using.
- Prep the bell peppers: Slice the tops and bottoms off the peppers to make them flat, then carefully cut away the seeds and white parts from the inside and discard. Then slice the peppers in half so you have 4 open sandwich halves.
- Prepare other ingredients: Cut the avocado, beetroot and cheeses into thin slices.
- Add the lettuce leaves and cheese to one pepper half, then spoon over some of the cilantro garlic sauce.
- Add the remaining cheese: Stack the cheddar cheese, mozzarella cheese, avocado and beetroot on top.
- Add the other half of the pepper: Place the other half of the pepper on top to make your sandwich. Repeat steps 4-6 with the second pepper.
