The outcome is the same. I cooked this recipe on the stove AND Instant Pot and in same evening and they looked identical!

Potato Leek Soup is seriously another fun soup to add to your recipe box! The leeks add some yummy flavor!
With out busy busy schedule, we need easy meals. This fits that bill!
This soup is simple enough that you can whip it up right before you want to eat!
- In a soup pot, heat 1-2 T of olive oil over medium heat.
- Saute leeks until soft.
- Add potatoes and saute for 4 minutes. Stirring constantly.
- Add veggie stock and some salt and pepper. Bring to a boil then summer for 20 minutes or until potatoes are tender.
