- When chopping hot peppers, avoid touching your eyes afterward! The oil from the peppers can be painful. To avoid this, wear gloves when handling peppers.
- Adjust the spice! The spice level of your corn pico will depend on how spicy your jalapeno is. You can include some of the pepper's seeds if you want the dip to be extra spicy. To make it milder, use less jalapeno, or replace it with green bell pepper instead.

Roasted Corn Pico
Ingredients
- 2 ears corn roasted or grilled
- 2 medium vine ripened tomatoes
- ½ red onion
- ¼ cup cilantro leaves loosely packed
- 1 jalapeno
- 1 clove garlic minced
- Juice of a lime (about 2 tablespoons)
- Salt to taste
Instructions
- Use a sharp knife to carefully shave off the roasted corn kernels.
- Finely dice the tomatoes, red onion, cilantro and jalapeno (removing the seeds).
- Add everything to a large mixing bowl along with the garlic, lime juice and salt. Mix well to combine. Taste and add additional salt or lime juice if needed.
