This Slowcooker Hash brown Soup is the ultimate comfort food. Better yet, you can make it in your slowcooker! You could call this Hash Brown Cheese Soup if you like, because it’s super creamy and cheesy.
Who does not love an easy meal? This comfort meal is perfect served up on a cold day! But honestly, any time of the year will be just right!
You are taking some pretty basic ingredients, then dumping them into your slow cooker. Then once you give it a stir to mix it, set the timer and forget it!
Simple Ingredients:
(You may already have these in your kitchen!)
- Frozen shredded hash brown potatoes
- Vegetable Broth
- Heavy Cream
- Cream Cheese
- Cheddar Cheese
- Onion
- Flour
You’ll also need some water and salt and pepper. These simple ingredients will create a delicious hashbrown crockpot soup.

Why is This Hashbrown Soup So Good?
While this isn't a breakfast recipe, it does come from my love of breakfast. You know that I love lazy weekend breakfasts.
While I don’t typically eat soup for breakfast, most of my favorite breakfasts include potatoes of some sort and typically hashbrowns. This recipe was me trying to come up with ways to incorporate more hashbrowns into my life! YUM!
Creamy potato soup is a common favorite comfort food, and for good reason. This soup is filling, creamy, cheesy, savory, salty. Everything that comfort food should be!
Why Do We Call Potatoes Comfort Food?
I did a little research on the concept of comfort food, and why certain foods (like potato soup) are considered more comforting than others. This article from The Atlantic talks about some scientific research that proved that for some people, eating potato chips lead to improved ability to deal with stress. The researchers determined that people who had strong ties between food and their childhood were better able to take advantage of this comfort food benefit.
I love science about food! In most cultures, it seems to be food that we ate as children that gives us the most comfort. In western cultures that includes mashed potatoes, hash browns, and french fries.
That must be why hash brown soup is so comforting to me. It reminds me of those breakfasts I had as a kid with piles of hash brown potatoes. Also high on my comfort food list is Crockpot Mac and Cheese!
What Type of Hashbrowns Are the Best for Potato Soup?
I typically use frozen, shredded potatoes for this recipe, but you could absolutely make this soup with the shredded potatoes that you find in the refrigerated section of the grocery store. You could even shred fresh potatoes if you wanted to.
Use a kitchen scale to measure 20 ounces - or just eyeball it. There’s nothing wrong with adding a little extra potatoes into this recipe.
Can I make Hashbrown Soup in an Instant Pot?
The short answer to this question is YES, but I’ll warn you that I haven’t tried it myself yet. Everything will cook very quickly in the instant pot though - I bet it would take about 10-20 minutes under pressure to finish. How awesome would it be if you could have cheesy potato soup in 10 minutes? I’ll put this on my list to test out for you.

So let's get to this easy recipe, shall we?
Slowcooker Hashbrown Soup
Ingredients
- 1 20 oz bag of frozen Hashbrowns (the shredded kind)
- 32 oz of Vegetable Broth
- 1 cup of water
- A dash of salt and pepper to season
- ½ c white onion diced
- 2 T All Purpose Flour I used a gf all purpose blend
- 1 c heavy cream
- 8 oz block of cream cheese softened
- 2 c shredded cheese I used a blend
- Garnish: green onion diced and Parsley
Instructions
- Dump all ingredients, except the cream cheese and the shredded cheese into the slow cooker. Stir to mix.
- Cook on HIGH for 3 hours.
- Remove lid and stir in the cream cheese and the shredded cheese. Stir until melted or put the lid back on for approximately 12 minutes.
- Ladle into bowls and garnish.
- ENJOY!

That's definitely comforting food! I love hashbrowns, prior to moving we did weekly breakfast burritos on Sunday nights thing. We haven't done it since moving to Loveland but its made of hashbrowns and sausage and eggs and cheese and well its just delicious, like this soup looks!

Your soup looks amazing! I can picture it on a cold blustery NY night, since it gets dark here at 5pm, and most are hunkered in for the evening. The ingredients are yummy (lets forget that I am Dr. ordered low card) and even I sneak a good hot comfort meal in about once a week. Throw it in the crock pot and add in, stir, I can handle that.
