These Air Fryer Potato Pancakes are crispy, yet tender and will satisfy everyone’s tastebuds. This potato pancakes recipe can be served as a main side or side dish.

When it comes to potatoes, I am pretty much their number one fan! Seriously, I love potatoes! My friend Erica, even calls me Spuds 🙂  Speaking of my love for potatoes, if you love them too, you should try our Vegetarian Potato Soup, Air Fryer Baked Potato and the Air Fryer Roasted Potatoes.

 

Mashed potatoes is probably my favorite type of potato recipe. You just can’t go wrong with this comfort food! Since we always seem to have leftovers, I thought I should put them to good use and make leftover mashed potato pancakes!

Ingredients Needs for Mashed Potato Pancakes:

  • Mashed Potatoes
  • Green Onions
  • Flour
  • Spices
  • Egg

Tips for Leftover mashed potato pancakes:

  • You can use mashed potatoes, grated potatoes or hashbrowns…I prefer mashed potatoes. Pro Tip: if you used grated potatoes, you will need to squeeze the water from them. If they are too watery this will affect the potato pancakes recipe.
  • Do you like crispy potato pancakes,  make them thinner.
  • If texture is an issue, you can blend all ingredients in a food processor to get a smooth texture for your potato pancakes.
  • Be careful flipping over the potato pancakes in the air fryer basket, they will be delicate.
  • Be careful when plating, if the potato pancakes are dropped they will break apart.
  • ProTip: If you want your leftover mashed potato pancakes to be golden brown, you can spritz some oil on them.

How to make potato pancakes:

  1. To make potato pancakes, scoop the leftover mashed potatoes into a bowl.
  2. Then add the diced green onions (scallions) to your mashed potato bowl. 
  3. Pour the flour and spices into the bowl.
  4. Scramble one egg in a small bowl then add it to the potato bowl mixture.
  5. Mix all ingredients well.
  6. Form into patties.
  7. Put the potato pancakes into the air fryer basket. Cook at 380 degrees F for 10 minutes.
  8. Flip left over mashed potato pancakes mid way through.
  9. Plate your potato pancakes and serve with a side of sour cream (optional).

Do I have to use an air fryer? No, you do not. You can fry these mashed potato pancakes in an oiled skillet over medium heat. Fry until golden brown.

Wondering what you can top these mashed potato pancakes with? Ah, there are so many choices. You can top them with shredded cheese, sour cream, and if you are a meat eater you could serve with crumbled bacon or ham bits. Applesauce is also an traditional add-on as a side for potato pancakes!

Can I use hashbrowns or grated potatoes instead of mashed potatoes? No matter how you make these easy potato pancakes, you will be satisfied. You can use hashbrowns, grated potatoes or mashed potatoes. 

Can you freeze this leftover mashed potato pancake recipe?  Yes, you can. Let the potato pancakes cool completely. Gently place into Ziploc baggies or storage containers and freeze until you are ready to enjoy.

  • 3 green onions diced (whites and greens)
  • 1 t oregano
  • 1 t smoked paprika
  • 2 T All-purpose gluten-free flour OR AP Flour
  • 1 egg
