Tofu Noodle Bowl Recipe
If you've been reading my site for a while, you know that I am pretty obsessed with three things: tofu, tofu press and my air fryer! Those three things, I am just not sure I can live without!

I am busy, are you? Honestly, I am seriously always striving to find things that can make my life easier. I go in spurts when I am super organized and I make time for meal prep.
Those are honestly my best weeks. I am here to fully admit I need to be better about that. With that said, this recipe fits that bill!
INGREDIENTS IN TOFU NOODLE BOWLS
Sunbutter - For a delicious "peanut" sauce. We use Sunbutter in place of peanut butter, but you can use peanut butter or Tahini here instead.
Soy Sauce - Gluten free soy sauce or coconut aminos goes in the sauce for saltiness
Siracha - I love the spiciness that siracha gives to the sauce. Add more or less to your taste.
Sesame Oil - The smoky nutty flavor of sesame oil is delicious here.
Edamamme - These beans add protein and a bright green color to your tofu bowls.
Cucumber - Another bit of green and a cool crunch comes from cucumber.
Rice Noodles - Rice noodles are so yummy with the secret sauce. Use your favorite style.
Firm Block Tofu - You'll be making this into cubes and crisping them up!
Coconut Aminos - Add flavor to your tofu with this yummy stuff.
Corn Meal - dredge your tofu in cornmeal before frying to give it extra crunch.

This recipe has a few steps but they are all so simple. First you need to prepare the tofu! So we will start by pressing the tofu.
HOW TO PRESS TOFU
There are two ways to press tofu. You can use a Tofu Press or you can press your tofu by balancing heavy objects on top of it.
I prefer the tofu press method. It has been almost a decade that I have been using the EZ Tofu Press. I use it weekly and it continues to do an amazing job!
The EZ Tofu Press takes the liquid out of your firm or extra firm tofu easily, quickly, and with less mess than using plates and cans. This press utilizes simple mechanics and quality materials to ensure that it’s long-lasting and easy to use.
HOW LONG TO PRESS TOFU
I press my tofu (using the EZ Tofu Press) for 10-12 minutes. I turn the knobs tighter on the press every 3-4 minutes.
We are actually going to make the crispy tofu recipe that I shared a few months back. Remember that one? If not, here is how you make that.
HOW TO MAKE CRISPY TOFU
- Prepare your tofu by pressing it for 10-12 minutes, turning the knobs tighter every 3-4 minutes. Once tofu is pressed, remove from the press and cut into cubes. In a shallow serving platter combine the tofu cubes and the coconut aminos. Marinate for 10 minutes.
- Using a gallon sized baggie, combine the tofu cubes (not the marinate liquid) and the cornmeal. Gently toss to combine. The tofu cubes should be coated well.
- Place tofu cubes into your air fryer basket. Optional: You can give a little spray of oil to the cubes to help them brown and crisp better. Cook at 370 degrees F at 12 minutes. Be sure to shake the air fryer basket mid way through. (You can also give the tofu cubes another spray of oil when you shake it.)
- When time is completed, remove the crispy tofu from the air fryer basket. Set the tofu aside until you are ready to construct your bowls.
See how easy that is? Now that you've made your crispy tofu, you need to prepare the ingredients for the tofu noodle bowls. Oh yes and make that delicious sauce! After you've prepped those ingredients, you will need to construct your bowls.
HOW TO MAKE TOFU NOODLE BOWLS
- Equally divide the cooked noodles into four bowls.
- Next, divide the cooked edamame between the four noodle bowls.
- Up next is the diced cucumber. Equally divide that among the four tofu noodle bowls.
- Step 4 is to add the crispy tofu to the noodle bowls.
- Finally, add the secret sauce to each bowl!

Whoa that was simple! I told you! So I think we officially have NO excuse not to lunch prep! This is so easy and doesn't take long at all!
TIPS FOR TOFU NOODLE BOWLS
- Pick the correct kind of tofu when making crispy tofu. I use Firm or Extra Firm Silken Tofu. While the textures are very similar, the extra firm is the one that tends to hold out the best. It stands up to lighter cooking and holds together a little bit better.
- Press the tofu with your EZ tofu press to remove the liquid and get it ready to cook.
- Season your tofu so that it has taste and flavor. In this recipe, we used coconut aminos, but you can use a soy sauce as well. We also coated with cornmeal. Keep in mind that the tofu takes on the flavor of what you season it with. This means that you control the flavor outcome 100%.

Tofu Noodle Bowls
Ingredients
- ¼ c SunButter or tahini/peanut butter

- 1 T sesame oil
- sriracha *to taste for sauce

- 1 c cucumber diced
- 8 oz rice noodles cooked
- block tofu extra firm
- 4 t coconut aminos or gluten free soy sauce
- ¼ c cornmeal
Instructions

- In a small bowl, whisk together SunButter, soy sauce, sesame oil and sriracha. Once the sauce is mixed, set aside.
- Gather four equal sized bowls. Divided cooked noodles, edamame, cucumbers and cooked tofu among bowls. Finally stop equally with sauce.
- Enjoy for lunch all week long!
