VEGAN CHICKEN SALAD RECIPE
Easy recipes are my favorites! Vegan Chicken Salad is the same flavors as the original but no meat, dairy, or eggs here!
Packed with carrots, celery, red onion, scallions, dill, pickles, vegan mayo, and creamy chickpeas, it’s the best vegan salad out there!
INGREDIENTS IN VEGAN CHICKEN SALAD
Chickpeas: This is your main ingredient! You’ll want them fully cooked before mixing this vegan cold salad together. You can use canned garbanzo beans or fresh that have been pre-cooked. It’s a great way to use leftovers, too!
Celery: This simple veggie brings a beautiful peppery flavor to the dish! Plus, it’s full of great nutrients.
Dill: This fresh herb is a must in my vegan chickpea salad! Dill adds a deliciously fresh, citrus-like taste, and helps brighten up this thick and creamy dish.
Scallions: Green onions are my favorite onions! They add a similar oniony taste but a delicate version. You can garnish your finished vegan chicken salad with some sliced scallions too for a beautiful potluck dish!
Vegan mayonnaise: This is the glue for your chickpea salad! If you’re not on a vegan diet, you can swap this for regular mayo.
Red onion: Some people prefer white or sweet onions for their vegan chickpea salads, but I like the sharp taste of a raw red onion.
Carrots: I tend toward a super fresh and crunchy vegan chickpea salad. The small diced carrot bits bring a natural sweetness to the dish plus some extra crunch.
Pickles: Every chicken salad needs a little acid, and pickles are a great crunchy way to add it. You can also use relish here in a pinch.

HOW TO MAKE VEGAN CHICKPEA SALAD
- First, prep all your ingredients and put the cooked chickpeas in a large mixing bowl.
- Then, add the celery, dill, vegan mayo, red onion, carrots, and pickles to the mix.
- Now, gently stir everything together until it’s fully combined.
- Finally, serve it on vegan bread with a slice of tomato and a piece of lettuce or simply on its own! I love this as a simple snack with Club crackers.
Like most chicken salads, the taste only improve with time. Feel free to make this a day early and let the flavors meld in the fridge!

I eat this vegan chickpea salad almost every week in the summer! It’s super creamy and the perfect cold lunch for a hot day.

ARE CHICKPEAS AND GARBANZO BEANS THE SAME THING?
Chickpeas are one of my favorite vegan meat substitutes! They’re rich in protein, folic acid, fiber, iron, and healthy fatty acids.
Chickpeas are also known by their Spanish name, garbanzo beans! They’re in the same legume family as kidney beans, black beans, lima beans, and peanuts.
There’s even two types of chickpeas! We usually see the larger, lighter-colored variety in the United States, but the darker, irregularly shaped Desi-type is more commonly found in the Middle East.
DO I NEED TO COOK CANNED CHICKPEAS?
Like most canned vegetables, chickpeas are fully cooked! They’re perfect for this recipe since there’s no cooking involved.
Just rinse the garbanzo beans and add them to your mixing bowl. Done!

- 1 cup celery diced
