I keep this sweet potato pie gluten-free with a simple, creamy filling and a gluten-free pie crust. The light brown sugar combined with the ginger, nutmeg, and cinnamon make for the best fall dessert recipe.
INGREDIENTS IN VEGAN SWEET POTATO PIE
Pie crust: I always use this gluten-free pie crust recipe! It is flaky, buttery, and oh-so-easy with the food processor.
Sweet potatoes: You only need a few sweet potatoes for this easy pie recipe! Check out my tips below for the best sweet potato prep method.
Brown sugar: I love the extra nutty richness brown sugar brings to this vegan pie. I use light brown sugar, but you can always use dark brown sugar for a deeper taste, too.
Cornstarch: This helps the pie filling set without adding gluten to the mix.
Cinnamon: Freshly grated or store-bought ground cinnamon work well in this sweet potato pie recipe. It's the perfect sweet and savory spice!
Nutmeg: I don't always love nutmeg, but it goes perfectly with sweet potato pie. If you're out, use a dash of pumpkin pie spice!
Ginger: This savory spice is great for desserts, too. It adds a depth of flavor you can't get otherwise.

HOW TO MAKE VEGAN SWEET POTATO PIE
- First, preheat your oven and prep your ingredients. This pie is easy to make fast, so you want to have everything ready!
- Then, add the sweet potato puree, brown sugar, cornstarch, cinnamon, nutmeg, ginger, vanilla extract, salt, flax egg, canola oil, and coconut milk to the food processor.
- Blend until everything is super smooth and combined. I usually scrape down the sides at least once while mixing.
- Now, spoon the sweet potato pie filling into your par-baked pie crust. Smooth out the filling with a knife or off-set spatula.
- Bake until the crust is perfectly golden brown and the filling is almost completely set. The center should wobble slightly — it will keep cooking as it cools.
- For the most perfect sweet potato pie slice, let the pie cool at least 1 hour before slicing.

The battle of sweet potato pie versus pumpkin pie is always raging in our family. I make a sweet potato pie, and someone else brings the pumpkin pie.
While many creamy vegetable-based pies date back to medieval Europe, sweet potato pie first appeared during the early colonial days in the Southern states. Sweet potatoes are native to the Americas, and they were used by enslaved Africans instead of yams, which are technically different!
The first sweet potato pie recipe appeared in 18th century cookbooks as a savory vegetable dish. However, by the 19th century, this Thanksgiving classic was officially a dessert!
HOW DO YOU KEEP A SWEET POTATO PIE FROM GETTING STRINGY?
Perfectly cooked sweet potatoes are fluffy and luscious, plus they are packed with nutrients. But how do you avoid the dreaded stringy texture in a vegan sweet potato pie?
Most of the stringy texture is actually connected to the ends! First, cut off both ends of your sweet potatoes. Then, cut the whole thing in half horizontally, then cut the potato into pieces to cook and mash.
You can boil or roast sweet potatoes for this pie, but I think roasted gives it a better flavor.
HOW TO STORE VEGAN SWEET POTATO PIE
Most creamy pies need to be kept in the refrigerator after baking. But not vegan sweet potato pie!
Since you do not have to worry about any dairy-based ingredients going bad, you can keep this sweet potato pie at room temperature on the kitchen counter. This will last up to a week, but we never have leftovers that long!
You can also easily freeze this pie! For the easiest make-ahead dessert, cool the baked pie completely, wrap tightly, and freeze. Simply thaw and enjoy when it is time for dinner.

Vegan Sweet Potato Pie

Ingredients
- 1 pound sweet potatoes cooked, peeled, and blitzed into a puree in a food processor
- 1 cup light brown sugar
- 2 tablespoons cornstarch
- ¼ teaspoon nutmeg
- ½ teaspoon ginger
- 1 ½ teaspoon vanilla extract
- ¼ teaspoon salt
- 1 flax egg
- 2 tablespoons canola oil
- ⅓ cup full-fat coconut milk
Instructions
- Preheat oven to 350 degrees F.
- Add all ingredients to the bowl of a food processor and blend until completely smooth and combined. Stop to scrape down the sides when necessary.
- Spoon the mixture into your prepared pie crust, and smooth it out in an even layer.
- Bake for 40 to 45 minutes. The center should still wobble slightly.
- Let vegan sweet potato pie cool for at least 1 hour before slicing.
