DESCONSTRUCTED LASAGNA RECIPE
My husband and I both grew up eating lasagna. There is just something about that hearty, saucy dish that is so comforting to us! Maybe you find it comforting too?
For this dish, you might be wondering why its called lasagna because it doesn't look like your traditional lasagna!? We took almost the same ingredients from our favorite lasagna recipe and made it into a pasta bake.
This "one dish" meal of Deconstructed Lasagna is packed with sauce, ricotta cheese and plenty of of mozzarella to create the most delicious lasagna recipe you've tasted in a while!

INGREDIENTS FOR DECONSTRUCTED LASAGNA
Pasta - For this dish, we recommend you use a Penne style pasta or something similar. It works perfectly in this recipe.
Sauce - You can use your own favorite jarred spaghetti sauce or our homemade spaghetti sauce.
Ricotta Cheese - We like to use ricotta cheese in our deconstructed lasagna but if you are looking to lower the fat and calories, you could use cottage cheese. If you use cottage cheese, we suggest straining it to make it closer to the consistency of ricotta.
Eggs - You can use whatever eggs you have on hand, brown or white work. We have not tried this recipe with anything other than a chicken egg.
Cheese - We suggest you use mozzarella and parmesan cheese to create the ooey gooey comfort food lasagna.

HOW TO MAKE DECONSTRUCTED LASAGNA

In a new bowl, combine the pasta and sauce. Stir to combine.Prepare the pasta, per the directions on the box. When pasta is done, drain under cool water

In a bowl combine the ricotta, eggs and parmesan. Blend until smooth and well mixed.

Lightly oil a 9X13 baking casserole.

Put half the pasta mixture in the casserole dish.

Top with all the ricotta mixture.

Add remaining pasta mixture to the casserole dish, creating layers. Cover and bake. Remove cover, add mozzarella. Put back in oven until cheese is melted.

WHAT TO SERVE WITH DECONSTRUCTED LASAGNA
Because this deconstructed lasagna is the ultimate comfort food, we feel that you should create a comfort food meal by adding in some delicious and homemade Gluten Free Rolls.

CAN I ADD MEAT TO DECONSTRUCTED LASAGNA?
Yes, you can add meat to this deconstructed lasagna recipe. If you are not vegetarian, you can add in sauted ground beef or chorizo. If you are vegetarian and want to add more protein into this dish, you can saute up some Impossible Burger or Beyond Meat.
CAN I ADD VEGGIES INTO DECONSTRUCTED LASAGNA?
Yes, you can add veggies into your deconstructed lasagna. We suggest sauteing up some mushrooms or zucchini to add into this dish.

Deconstructed Lasagna - a comfort food dinner
Ingredients
- 8 oz of Organic Red Lentil Penne by Explore Cuisine
- 32 oz pasta sauce
- 15 oz Ricotta Cheese
- 2 eggs
- ¾ c parmesan cheese
- 1 cup mozzarella cheese
Instructions
- Prepare the pasta, per the directions on the box.
- In a bowl combine the ricotta, eggs and parmesan. Blend until smooth and well mixed.
- When pasta is done, drain under cool water.
- In a new bowl, combine the pasta and sauce. Stir to combine.
- Lightly oil a 9X13 baking casserole. Put half the pasta mixture in the casserole dish.
- Top with all the ricotta mixture.
- Add remaining pasta mixture to the casserole dish, creating layers.
- Cover and bake at 350 degrees F for 30 minutes. Remove cover, add mozzarella. Put back in oven until cheese is melted.
- ENJOY!
