When it comes desserts, we love to take traditional comfort dessert recipes and transform them into vegan recipes.

INGREDIENTS FOR VEGAN BANANA PUDDING
Bananas - Use fresh bananas and slice the bananas about ⅓-1/2 inch thick. I try to use bananas that are yellow with just a few brown spots. That seems to be the perfect banana texture.
Whipped Cream - We used Vegan Coco Whip, ready made from the frozen foods aisle. It is made by So Delicious. If you want to make it from scratch you can use this vegan whipped cream recipe.
Cookies - I used crumbled up cookies for the base layer of this vegan banana pudding. If you are looking for store bought vegan and gluten free cookies, check out Simple Mills, Enjoy Life Foods and Cybele's.
Sugar - You can use your own favorite vegan sugar. I used Monk Fruit Sweetener. I am trying to cut back on my sugar intake. I've loved this 1-1 sugar sub!
Cornstarch - We used cornstarch to thicken the pudding. We used a vegan and gluten-free cornstarch from Amazon. If you don't want to use cornstarch, you can use your favorite thickener.
Dairy Free Milk - You can use your favorite type of vegan milk. I personally love Milkadamia. I used a blend of milkadamia and canned full fat coconut milk
Turmeric - I added a teeny tiny pinch of turmeric to add color to the pudding. Just a touch of this powder will turn the pudding color from white to yellow.

HOW TO MAKE VEGAN BANANA PUDDING
- Combine the sugar and cornstarch into a saucepan. Whisk the dry ingredients together.
- Slowly pour in the dairy-free milk(s). Whisk consistently, until thickened. This is where you want to add in the turmeric if you want your pudding to be a yellow color.
- Crumble up your vegan cookies (of your choice) and place them into an 8x8 baking dish.
- Get out a cutting board and use a knife to slice your fresh bananas into ⅓-1/2 slices and place into the 8x8 baking dish on top of the cookies.
- Gently pour the pudding over top of the mixture in the 8x8 baking dish to create another layer.
- Top the mixture in the 8x8 baking dish with whipped cream. Optionally, you can add some crumbled cookies to the top for garnish.

WHAT TO SERVE WITH VEGAN BANANA PUDDING

I, however, would love to suggest that you serve it with our mason jar cold brew. If you love cold brew, it will pair nicely with with this vegan banana pudding.
VEGAN BANANA PUDDING QUESTIONS
You do not need to add turmeric into this dish, it doesn't not affect the flavor it only changes the color.
This vegan pudding does last more than one day. For my family, it keeps in the fridge for 2-3 days. Just give it a stir before serving.
I haven't tried to freeze this vegan banana pudding, but I think it would be able to be frozen into individual servings and thawed when you are ready to eat. It may be a touch watery when thawed.
