VEGAN CHOCOLATE MUG CAKE RECIPE
Whenever I have a chocolate craving that can't be cured, I make these super rich Vegan Chocolate Mug Cakes. This totally gluten-free dessert is made in the microwave in just one minute.
This single-serve dessert is made with almond flour and cornflour instead of all-purpose flour but it's still just as fluffy with a beautiful rise. Like my beloved Campfire Brownies, this mug cake recipe is so fast and easy you can make it any time with almost no cleanup.
INGREDIENTS IN VEGAN CHOCOLATE MUG CAKE
Almond flour: I keep this recipe gluten-free with almond flour. It gives you the same rise as all-purpose flour with none of the wheat.
Cornflour: This and the almond flour combine for the fluffiest gluten-free chocolate mug cakes!
Olive oil: Any neutral oil will work here, but I always use olive oil. It helps keep the cake moist but not too wet.
Plant-based milk: Any alternative milk will work for this vegan mug cake recipe! Almond, soy, oat, rice, hemp, cashew — choose your own adventure here! You'll also probably want a glass to go with these decadent mug cakes.
Coconut sugar: Also known as coconut palm sugar, this natural sweetener is made from coconut palm sap. It's cholesterol free, fat free, low calorie, and sodium free!
Cocoa powder: I use a 100% cocoa powder to keep all the artificial sweeteners at bay. It also can help reduce inflammation!
Baking powder: This helps give the cake a rise without any eggs.
Vanilla extract: Everything you bake needs a little vanilla extract! These mug cakes are still super chocolatey, but vanilla adds an extra richness.
Dark chocolate: Most high-quality dark chocolates are vegan. Aim for one that's at least 50% cacao.

HOW TO MAKE VEGAN CHOCOLATE MUG CAKE
- First, mix together the almond flour, cornflour, coconut sugar, cocoa powder, and baking powder.
- Then, add the olive oil, alt milk, and vanilla extract to the dry ingredients. Keep stirring until there's no lumps!
- Now, fold in the chocolate chips until they're just combined throughout the batter.
- Next, pour the chocolate cake batter into two ramekins or coffee mugs. Make sure to leave a little gap at the top for the cakes to rise!
- Finally, microwave the vegan chocolate mug cakes for just more than a minute. If they're still wobbly, that's ok! The ceramic ramekins will keep cooking the cakes for a few minutes. You can also make these in the oven in about 15 minutes!
- Let the cakes cool a few minutes after baking to set. Don't worry — they'll still be warm and gooey after they rest.

The fun part about mug cakes is you can make them with few ingredients in any flavor you can imagine! I love these chocolate mug cakes topped with fresh fruit or vegan whipped cream.
I use ramekins for mine, but either works for this vegan mug cake recipe.
VEGAN MUG CAKE TIPS AND TRICKS
It's almost impossible to make these vegan chocolate mug cakes wrong, but here's a few tips and tricks to make the best mug cake every time.
- Sift the dry ingredients: To make sure my mug cake has no lumps of raw almond flour or coconut sugar, I like to sift the ingredients before adding the milk and extract. You can use a mesh strainer or a sifter for lump-free cakes every time.
- Keep it wobbly: The ceramic mugs or ramekins will keep cooking the cake after it's out of the microwave. You want it to be slightly under-baked in the center when you stop cooking.
- Wider is better: A wider, shorter mug is what you want for a perfectly cooked mug cake. This helps get the fluffy rise, kind of like a chocolate soufflé.

Vegan Chocolate Mug Cake
Equipment
- Coffee mugs or ramekins
- Microwave
Ingredients
- 6 tablespoons almond flour
- 2 tablespoons cornflour
- 2 tablespoons olive oil
- 8 tablespoons plant-based milk
- 4 tablespoons coconut sugar
- 4 tablespoons 100% cocoa powder
- ½ teaspoon baking powder
- 1 teaspoon vanilla extract
- 2 tablespoons dark chocolate chips or chopped dark chocolate
Instructions
- Mix together all dry ingredients.
- Add the wet ingredients to the dry ingredients. Stir to combine until no lumps remain.
- Fold in chocolate chips until just combined.
- Pour batter into ceramic coffee mugs or ramekins. Microwave for 65 seconds. To use an oven, preheat to 180 degrees F and bake about 15 minutes.
- Let set 3 to 5 minutes before eating.
