VEGAN BEEF STEW RECIPE
Growing up, we used to always eat Dinty Moore Beef Stew. Anybody else? We would serve it over rice and it was a huge treat for me.
Fast forward to my adult hood and I've erased the need for animal meat in my diet. While the meat is gone from my diet, the memories of that delicious comfort food remains!

INGREDIENTS FOR VEGAN BEEF STEW
Onion - I prefer to use a white or yellow onion in this dish. You can use a red onion, but I would suggest soaking it in fresh water for 5 minutes to remove some of the "punch."
Carrots - Truly any type of carrot will due. I choose full sized carrots, so I could cut them into perfect little circles.
Celery - You can use fresh or frozen celery. Sometimes when I have extra celery, I dice it and pop it into the freezer for later.
Portobella - You can use any type of mushrooms but the portobella cut into ¾ inch pieces mimics the size of beef tips extremely well.
Garlic - You can use fresh garlic, but I save time and buy minced garlic. I keep the jar in my fridge for easy access!
Potatoes - This recipe uses russet potatoes, but any white, red or even purple potatoes will work in the russet's place.
Broth - You can make your own broth or use store bought veggie broth. I try to purchase a "low sodium" veggie broth.
Herbs - Fresh herbs are key in this recipe. While they bring a huge amount of flavor, you can sub in dried herbs in a pinch.
Peas - The peas add a beautiful pop of green color to the finished dish.
Liquid Smoke - We love the use of liquid smoke in dishes to help bring out the earthy deep flavors of the dish.
Flour - Any type of all purpose flour works in this recipe, if you are gluten-free be sure to use an all purpose gluten-free flour.

HOW TO MAKE VEGAN BEEF STEW
- Heat oil in a large soup pot. When oil is warm add in celery, carrots and onion. Saute until soft.
- Next, add in the minced garlic and chopped mushrooms. Stir and saute for 3 minutes. Then slowly add flour while stirring. Everything in the pot should be lightly and evenly coated with flour.
- Add the veggie broth and water to the pot.
- Pour in the cubed and peeled potatoes to the pot mixture. Turn up the heat to a medium high heat.
- Add in the fresh herbs and liquid smoke. Bring mixture to a boil, then turn down and simmer for 30 minutes or until potatoes are tender. (Optional: Take 1-2 cups of stew mixture and blend in a blender until smooth, then return to pot.)
- Pour in the frozen peas, stir and let the stew rest for 5 minutes. Enjoy!

WHAT TO SERVE WITH VEGAN BEEF STEW
Vegan Beef Stew is a total comfort food meal. It is hearty and filling, we suggest that you pair it with some lighter foods to balance out your meal. This dish would pair nicely with a light salad such as our Tofu Salad.

WHAT CAN I SUBSTITUTE FOR STEW MEAT?
When it comes to making a vegan stew, you can substitute a few ingredients for typical stew meat. You can sub in portabella mushrooms for stew meat or Gardein Brand Vegan Beef Tips (not gluten free).
IS STEW HEALTHY?
Stews tend to have a thicker consistency, which means they have a more gravy-like texture. Heavier ingredients with less liquid can lend to a higher calorie meal, but when done right, like Vegan Beef Stew, a stew can be a healthy, filling option.

Ingredients
- 2 T oil
