AIR FRYER ZUCCHINI FRITTERS RECIPE
This recipe is adapted from our Zucchini Corn Fritters recipe. We wanted to be able to enjoy these zucchini fritters but without all the oil that is needed to fry them when using the skillet method.
Years ago, we created this zucchini fritters recipe because we wanted a way to use up our garden zucchini. So we were on the hunt to create more shredded zucchini recipes.
This air fryer zucchini adapted recipe actually has some history and quite a fond spot in my heart. Back in 2012, I posted this recipe in August. This literally is one of our favorite meals. The recipe got some interest but nothing too crazy.
Then it happened. This is the recipe that broke my website. I woke up Thanksgiving morning and happened to log into my site. It was broke.
You see the day before this recipe was listed in a HUGE freezer meal round up for new moms. You can see the round up here, they have reposted it an updated it with new dates throughout the years.
They listed my recipe as #7 on the list of 24 and the internet went wild! So wild that my little site couldn’t handle the traffic. The site was down for most of the day before and most of that Thanksgiving day.
My host worked hard to upgrade the server and I was back up and running the day after. I am extremely thankful for the visitors that came those days and the days after.

INGREDIENTS IN AIR FRYER ZUCCHINI FRITTERS
Taco Seasoning - You can use your favorite brand, any taco seasoning will do.
cornmeal - This adds bulk to the fritters and a nice crunch.
all purpose gluten free flour
baking powder - We add baking powder to give a bit of rise to these fritters.
sea salt - For seasoning.
eggs - Eggs hold everything together and aid in browning.
milk - Use whatever milk or non-dairy milk that you like to mix up this batter.
honey - These fritters and sweet and salty.
butter - Butter mixed in to the batter makes these savory, buttery, and crispy.
shredded cheddar cheese - I love cheese. Cheese gives the fritters a melty inside texture.
frozen or fresh corn - Thaw your frozen corn a bit before cooking.
shredded zucchini - Grate your zucchini and squeeze out as much liquid as you can.

HOW TO MAKE AIR FRYER ZUCCHINI FRITTERS
- Mix together ingredients, stirring in 1-2 T of taco seasoning.
- Whisk eggs together.
- Pour egg mixture into ingredients.
- Mix everything together!
- Scoop 1-2 Tablespoons of corn mixture into your hands and press down to form a “patty”.Place fritters into your air fryer basket. Cook your fritters as directed in the recipe. Let the zucchini fritters rest for 4-5 minutes before serving.

TIPS AND TRICKS FOR AIR FRYER ZUCCHINI FRITTERS
- If you have made these before using the skillet method, they will be brown up as much because you are not cooking them in an oil bath. Likewise, the zucchini fritters will also not crisp up as much.
- If you do not have an air fryer, you can make these zucchini fritters by using our Zucchini Corn Fritters recipe.
- It is key to let your zucchini fritters rest for 4-5 minutes after cooking in the air fryer. This helps the fritters to become firmer.
CAN I FREEZE ZUCCHINI FRITTERS?
Yes! These little guys freeze well so double the recipe or triple the batch so you can stock your freezer.
You’ll love taking them out of the freezer for some quick meal prep! These are also great to share with friends. I often try to keep some pre-made meals in my freezer so I can share with friends when they might need it. Think: new baby, surgery, death in the family, etc
If you want to freeze the corn fritters, and you have a large freezer, I would suggest placing the air fryer zucchini fritters on a baking sheet and placing into the freezer first.
That way the individual fritters can freeze, then you can place them into bags or containers. If you don’t have room for a baking sheet in your freezer, you can put the fritters onto plates to freeze thoroughly first.
TIPS FOR WORKING WITH ZUCCHINI
- I use a hand grater to grate my zucchini. For me, this method is quick and the food grater is affordable! Nothing fancy here!
- Zucchini is naturally full of moisture. Ready for my number one tip after you grate zucchini? It is important that you squeeze your zucchini in a paper towel after you have grated it. If you don’t, the recipe will be too watery!
- If you forgot to squeeze the zucchini and your recipe is too watery, no problem! You need to add more flour to your mixture 1 Tablespoon at a time until you reach a consistency that allows you to form a patty with the mixture.

Zucchini Corn Cakes
Ingredients
- 1-2 T Taco Seasoning check to make sure its GF, many times there are hidden ingredients in there
- 2 cups cornmeal
- ¼ c all purpose gluten free flour
- 1 teaspoon baking powder
- ¼ teaspoon sea salt
- 2 eggs
- ¾ cup milk
- ¼ cup honey
- ¼ cup melted butter
- ¾ cup shredded cheddar cheese
- 2 cups frozen or fresh corn
- ½ cup shredded zucchini
- Spray oil for air frying
Instructions
- To make your air fryer zucchini fritters, mix together ingredients, stirring in 1-2 T of taco seasoning.
- Scoop 1-2 Tablespoons of corn mixture and press down to form a “patty”.
- Places zucchini fritters into the air fryer. cook at 380 degrees F for 5 minutes. Flip patties and cook for another 3 minutes.
- Let your zucchini fritters rest 4-5 minutes before eating.
- ENJOY!

Hi Jan 🙂 If you can do cornmeal, I would stick with that and exclude the flour. The flour is such a small amount that should work for you! 🙂
